Yesterday was our 1 year anniversary! Can you believe that?! I had to work in the morning, but I was able to convince my boss to let me leave early (one hour early...let me tell you, it took a full week to convince him...I love my job, I love my job, I love my job...) and then Clint met me at work. We drove to my mom's house where we both changed into nice clothes and chatted with my little sister Hannah. Then we headed down to Pismo Beach for dinner. We went to the Sea Venture restaurant and had such a fun time! It was MUCH fancier than either of us are used to so that was a big surprise. But it was so much fun! Here's to the rest of our lives together my love! :)


That morning, Clint had dropped Chase off at Petsmart to get groomed. So after dinner we headed over there and picked him up. He looks TONS better and I know he feels tons better too! He went from looking like this: ...to looking like this: We are just really excited that he is no longer looking like a wooly mammoth!


Today is also a very somber day for me. Seven years ago today was the death of two boys my age. McKay Edwards and Ian Purdon. It is always a hard day for me, so I decided to spend some extra time with my mom and sister. I miss you both so much, but I do have the knowledge and faith that I will see each of you again someday.

Here is my cheesecake recipe for a 10" cheesecake.
Crust:
1 3/4 cp ground graham crackers
1/3 cp brown sugar
1/4 cp chopped nuts
1/2 cp melted butter
Mix crackers, brown sugar, and nuts in blender. Pour into a spring form pan, add butter and mix together. Press mixture up the sides 3/4 of the way, press the rest in the bottom. Bake 5-10 min at 350 deg. Cool while making cream cheese mixture. (I don't put the nuts in and I don't like to put the crust up the sides cause I don't like it that much, so I just put it on the bottom)

Cake:
5 8oz pkg softened cream cheese
1 1/2 cps sugar
2 Tbsp vanilla
1 cp sour cream
5 eggs
1 1/2 Tbsp grated orange rind (opt)
Have all ingredients at room temp. Beat cream cheese until smooth, add sugar. Add sour cream and blend well. Add eggs one at a time beating until just blended. Add vanilla and rind. Mix together on low speed. Fill cookie sheet with water and place on bottom rack. (This prevents the cake from cracking on top) Pour mixture into crust. Bake at 300 deg for 1 hour. Turn oven off and leave cake in oven for another hour.

CONGRATULATIONS!!
1 year down, forever to go. Glad you still like each other. ;) Chris and I will ask, "So you still like me? Want to try out another year?" LOL

I am so sorry to hear about your friends. Its almost unreal to know someone so young lose their life so young. It just feels wrong. That must have been a tragic experience for all.
